In our interview with Bill Tobin, Managing Partner of Tiki's Grill & Bar and Chairman of the Hawaii Restaurant Association, diners will learn about the major challenges facing the restaurant industry in Hawaii now - I was surprised to learn that tip pooling (a not uncommon practice in some places) can be construed as illegal. Bill also talks about the economies of scale and how Mom & Pop places can compete with the big, bad boys of the national chains. We wind up our interview with the usual interesting conversation about places to eat and favorite foods. In the news, changes are afoot at two of Honolulu's restaurants with some chef shifting going on.
