Elizabeth Andoh, the world's foremost English-speaking Japanese culinary scholar is our guest for Podcast No. 22. In a fascinating conversation we discuss the philosophy of washoku or 'food in harmony' as it applies not just to Japanese food but to all cuisines. We also talk about her experiences as a young American woman living in the remote Japanese countryside of Shikoku in the 1960s where she was first exposed to the application of washoku principles in daily life.
